Beef Tenderloin

    Prepare the Beef

    Take the beef tenderloin out of the refrigerator and let it sit at room temperature for about 30 minutes.

    Season the Beef

    Rub the tenderloin with olive oil, then season generously with salt and black pepper on all sides.

    Sear the Beef

    In a large skillet over high heat, add the beef tenderloin. Sear for about 3-4 minutes on each side until a golden-brown crust forms.

    Add Aromatics

    Add crushed garlic cloves and fresh thyme to the skillet during the last 2 minutes of cooking.

    Finish Cooking

    For medium-rare, roast in a preheated oven at 400°F (200°C) for about 10-15 minutes, or until the internal temperature reaches 130°F (54°C). Adjust cooking time for your desired doneness.

    Rest the Beef

    Remove from the oven and let the beef rest for at least 10 minutes before slicing.

Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into evenly sized chunks. Place in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Red Wine Jus

    Sauté Shallots

    In the same skillet used for the beef, add 1 tablespoon of butter and finely chopped shallots. Sauté until translucent.

    Deglaze the Pan

    Pour in the red wine and scrape up any browned bits from the bottom of the skillet. Allow it to simmer for about 5 minutes.

    Add Broth

    Add beef broth to the skillet and continue to simmer until the sauce reduces by half. Season with salt and black pepper to taste.
