Preparation of Beef Tartare

    Prepare the Beef

    Finely chop the beef tenderloin into small pieces. Ensure that your knife is sharp to get a clean cut. Place the chopped beef in a mixing bowl.

    Finely chop the shallot and parsley. Add them to the bowl with the beef along with the capers. Mix gently to combine the ingredients.

    Incorporate Egg Yolk

    Add the egg yolk to the beef mixture. This will help bind the ingredients together and add richness. Mix gently but thoroughly.

    Season the Mixture

    Season the mixture with salt and black pepper to taste. Mix again to ensure even seasoning.

Preparation of Mustard Aioli

    In a mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, minced garlic, salt, and black pepper.
