Preparation

    Prepare the BBQ Sauce

    In a medium saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, mustard, garlic powder, onion powder, salt, and black pepper. Stir and bring to a simmer for about 10 minutes until thickened slightly. Remove from heat and set aside.

    Marinate the Chicken

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Add chicken breasts and coat them evenly. Let them marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, about 375°F (190°C).

    Grill the Chicken

    Remove chicken from marinade and place on the grill. Cook for 6-7 minutes on one side without moving, then flip and cook for another 6-7 minutes until the internal temperature reaches 165°F (74°C).

    Add BBQ Sauce

    During the last 2 minutes of grilling, brush a generous amount of the prepared BBQ sauce over the chicken, allowing it to caramelize slightly.

    Prepare the Toppings

    While the chicken is grilling, thinly slice the red onion and chop the cilantro. Set aside.

    Assemble the Dish

    Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Top each chicken breast with a generous amount of BBQ sauce, followed by shredded cheddar and jack cheese, sliced red onion, and chopped cilantro.
