Bratwurst Preparation

Mix the Sausage Filling
In a large bowl, combine ground pork and ground beef. Add the minced garlic, chopped onion, salt, black pepper, and cayenne pepper. Slowly pour in the Katy Trail Pale Ale while mixing until the mixture is well combined.

Stuff the Sausages
Rinse the sausage casings in cold water, then soak them in water for about 30 minutes. Stuff the casings with the sausage mixture using a sausage stuffer, twisting them into links as you go. Tie the ends securely.

Heat the Sauerkraut
In a saucepan, combine sauerkraut, caraway seeds, apple cider vinegar, and salt. Heat over medium heat for about 10 minutes, stirring occasionally until heated through.

Mash the Apples
Once the apples are soft, use a fork or potato masher to mash them to your desired consistency. Serve warm or chilled.
