Prepare the Filling
In a mixing bowl, combine the Boursin cheese and chopped cooked bacon until well mixed.

Stuff the Jalapenos
Take the sliced jalapenos and carefully stuff each slice with the cheese and bacon mixture.

Bread the Jalapenos
Dip each stuffed jalapeno slice first into the flour, then into the beaten eggs, and finally coat with breadcrumbs. Ensure each piece is fully coated.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Jalapeno Poppers
Carefully place the breaded jalapeno slices in the hot oil, frying in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown.

Drain and Serve
Remove the fried jalapeno poppers from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm.
