Method

Grilling Pork Chop

    Prepare the Pork Chop

    Rub the pork chop with olive oil, salt, and black pepper on both sides.

    Grill the Pork Chop

    Preheat the grill to medium-high heat. Grill the pork chop for about 6-7 minutes on each side or until it reaches an internal temperature of 145°F (63°C). Remove from the grill and let rest.

Making Jalapeno & Peach Sauce

    Blister the Jalapeno

    In a skillet over medium heat, add a little olive oil and blister the sliced jalapeno until charred. Remove and set aside.

    Cook the Peaches

    In the same skillet, add the diced peaches, honey, lime juice, and minced garlic. Cook for 5-7 minutes until the peaches soften.

    Combine the Sauce

    Add the blistered jalapeno back into the skillet with the peaches. Stir well and let simmer for an additional 2-3 minutes.

Making Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the cubed potatoes and enough salted water to cover. Boil until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, and salt. Mash until smooth and creamy.

Sautéing Vegetables

    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced bell pepper and zucchini.

    Sauté the Vegetables

    Cook for about 5-7 minutes until tender. Season with salt and black pepper.
