Sauté the Base Ingredients
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic
Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Cooking

Combine Liquids
Pour in the vegetable broth and add the canned diced tomatoes (with their juice) to the pot. Bring the mixture to a boil.

Once boiling, add the drained cannellini beans and rinsed quinoa. Stir well to combine.

Add dried thyme, dried basil, bay leaf, salt, and black pepper. Stir to incorporate all the seasonings.

Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the quinoa is cooked and the flavors meld.

Remove the bay leaf from the pot. Stir in the chopped fresh parsley and lemon juice just before serving.
