Main Ingredients

Method

Preparation

  1. 1

    Prepare the Chicken

Pat the chicken breasts dry with paper towels. Season both sides of each chicken breast with Cajun seasoning, salt, and black pepper.

  2. 2

    Prepare the Jalapeños

Slice the jalapeños into thin rings. Remove seeds if you prefer less heat.

Cooking

  1. 3

    Blacken the Chicken

Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken breasts. Cook for about 6-8 minutes on each side until the exterior is blackened and the chicken is cooked through (internal temperature should reach 165°F).

  2. 4

    Add Buffalo Sauce

Once the chicken is fully cooked, reduce the heat to medium. Pour buffalo sauce over the chicken, making sure it is well coated. Cook for an additional 2-3 minutes, allowing the sauce to heat up.

  3. 5

    Melt the Cheese

Sprinkle the pepper jack cheese evenly over the chicken in the skillet. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese is melted.

Serving

  1. 6

    Plate the Dish

Carefully remove the chicken from the skillet and place it on a serving platter. Top with sliced jalapeños for added heat and garnish.

  2. 7

    Enjoy!

Serve hot with your choice of sides, such as celery sticks or a fresh salad.
