Preparation
- 1
Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season both sides of each chicken breast with Cajun seasoning, salt, and black pepper.
- 2
Prepare the Jalapeños
Slice the jalapeños into thin rings. Remove seeds if you prefer less heat.
Cooking
- 3
Blacken the Chicken
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken breasts. Cook for about 6-8 minutes on each side until the exterior is blackened and the chicken is cooked through (internal temperature should reach 165°F).
- 4
Add Buffalo Sauce
Once the chicken is fully cooked, reduce the heat to medium. Pour buffalo sauce over the chicken, making sure it is well coated. Cook for an additional 2-3 minutes, allowing the sauce to heat up.
