Prepare the Pickled Onions
Slice the red onion thinly and combine with apple cider vinegar, sugar, salt, and water in a jar. Seal and shake well. Let sit in the refrigerator for at least 1 hour.
Pork Chops

Prepare the Pork Chops
Season the pork chops with salt and black pepper. Dredge in flour, shaking off any excess.

Fry the Pork Chops
Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the pork chops and fry until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet and set aside.

Add Broth and Seasonings
Gradually whisk in the chicken broth. Add onion powder, garlic powder, salt, and black pepper. Bring to a simmer and cook until thickened, about 3-5 minutes.

Place the fried pork chops on a serving plate, smother with the roux brown gravy, and top with pickled onions. Serve with your choice of fixins like mashed potatoes and green beans.
