Prepare the Chicken

Season the Chicken
In a large bowl, mix together the flour, salt, black pepper, paprika, garlic powder, and onion powder. Coat the chicken thighs thoroughly in the mixture.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Chicken
Add the seasoned chicken thighs to the skillet, skin-side down, and fry for 5-7 minutes until golden brown. Flip and fry for another 5-7 minutes until cooked through (internal temperature should reach 165°F). Remove chicken and set aside.
Make the Roux Brown Gravy

Create the Roux
In the same skillet with leftover oil, reduce heat to medium and whisk in 1 cup of flour. Cook for 3-5 minutes, stirring constantly, until the mixture turns a deep brown color.

Add the Broth
Gradually add the chicken broth to the roux, whisking constantly to avoid lumps. Bring to a simmer.

Season the Gravy
Stir in salt, black pepper, garlic powder, and onion powder. Simmer for 5-10 minutes until the gravy thickens.
Combine and Serve

Smother the Chicken
Return the fried chicken to the skillet, spooning gravy over the top. Let it simmer for an additional 10 minutes.

While the chicken simmers, prepare your two selected fixins according to your preference.
