Preparation of Cheese Mixture

Grate the Cheese
Using a box grater or food processor, grate the sharp cheddar cheese and set aside.

Soften Cream Cheese
Allow the cream cheese to sit at room temperature for about 30 minutes to soften.

Mix Ingredients
In a large mixing bowl, combine the softened cream cheese and mayonnaise. Mix until smooth.

Add Cheese and Pimentos
Stir in the grated sharp cheddar cheese and drained pimentos into the cream cheese mixture.

Add garlic powder, onion powder, cayenne pepper, and season with salt and black pepper to taste. Mix well to combine all ingredients.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
