Marinate the Chicken
In a large bowl, combine the buttermilk, cayenne pepper, paprika, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.

Dredge and Fry
In a separate bowl, mix the flour with a pinch of salt and pepper. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece of chicken in the flour mixture, ensuring an even coating. Heat the vegetable oil in a deep skillet over medium-high heat. Fry the chicken for about 6-8 minutes per side, or until golden brown and cooked through. Drain on paper towels.

Prepare the Sauce
In a small saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce and honey. Mix well and heat until warmed through. Set aside.
Chipotle Mayo

Make the Mayo
In a bowl, combine the mayonnaise, chipotle in adobo sauce, and lime juice. Mix well until smooth and creamy. Adjust seasoning to taste.

Assemble the Sandwich
Spread a generous layer of chipotle mayo on the bottom half of each burger bun. Place a piece of fried chicken on top, then drizzle with hot chicken sauce. Add a leaf of lettuce, a slice of tomato, and a scoop of coleslaw. Finally, top with the other half of the bun.
