Prepare the Gumbo

    Make the Roux

    In a large pot, heat the olive oil over medium heat. Add the flour and stir continuously for about 15-20 minutes until the mixture turns a dark brown color, resembling chocolate. Be careful not to burn it.

    Sauté Vegetables

    Once the roux is ready, add the diced onion, green bell pepper, and celery (the 'holy trinity' of Cajun cooking). Cook for about 5 minutes until the vegetables are softened. Stir in the minced garlic.

    Add Chicken and Sausage

    Add the chicken thighs and sliced Andouille sausage to the pot. Stir well to combine and cook for another 5 minutes until the chicken is browned.

    Combine Remaining Ingredients

    Pour in the chicken broth, diced tomatoes, bay leaves, dried thyme, Cajun seasoning, salt, and black pepper. Stir to combine all ingredients.

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 45 minutes, stirring occasionally.

    Garnish

    Before serving, remove the bay leaves and stir in chopped green onions and parsley for garnish.

Prepare the Rice

    Cook the Rice

    In a separate pot, bring the water to a boil. Add the long-grain rice and salt. Cover and reduce heat to low, cooking for about 18-20 minutes, or until the rice is tender and the water is absorbed.

Prepare the Cornbread

    Mix Dry Ingredients

    In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together the milk, egg, and melted butter. Pour the wet mixture into the dry ingredients and stir until just combined.

    Bake the Cornbread

    Pour the batter into a greased 8-inch square baking dish. Bake at 400°F (200°C) for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
