For the Fried Chicken

    Marinate the Chicken

    In a large bowl, combine the buttermilk and salt. Add the chicken pieces, ensuring they are fully submerged in the buttermilk. Cover and refrigerate for at least 4 hours or overnight for best results.

    In a separate bowl, mix together the flour, black pepper, paprika, garlic powder, onion powder, cayenne pepper, and additional salt. This will be the coating for the chicken.

    Heat the Oil

    In a large, heavy-bottomed pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Chicken

    Remove the chicken pieces from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

    Fry the Chicken

    Carefully place the coated chicken pieces into the hot oil, working in batches as needed. Fry for about 12-15 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
