Prepare the Fish
In a shallow dish, whisk together the eggs and milk. In another dish, mix the cornmeal, flour, salt, and black pepper.

Fry the Fish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated fish fillets and fry for 3-4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Assemble the Sandwich
On the bottom half of each burger bun, layer lettuce, sliced onion, the fried fish fillet, a slice of cheddar cheese, house pickles, a drizzle of tartar sauce, and ranch dressing. Top with the other half of the bun.
