Preparation
1. Prepare the Collard Greens
Wash the collard greens thoroughly under cold water to remove any dirt or grit. Remove the tough stems and chop the leaves into bite-sized pieces.
2. Chop the Onion and Garlic
Peel and chop the onion into small pieces. Mince the garlic cloves.
Cooking
3. Sauté the Onion and Garlic
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant.
4. Add the Collard Greens
Stir in the chopped collard greens into the pot with the sautéed onion and garlic. Cook for about 2 minutes until the greens start to wilt.
5. Add Broth and Seasonings
Pour in the chicken broth (or vegetable broth) and add the red pepper flakes, salt, and black pepper. Stir well to combine all ingredients.
6. Simmer the Greens
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes or until the collard greens are tender.
7. Serve
Once the collard greens are tender, taste and adjust seasonings if necessary. Serve warm as a side dish.
