Prepare the Chicken

Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.

Dredge the Chicken
In a separate bowl, place the all-purpose flour. Remove each chicken thigh from the marinade, allowing excess buttermilk to drip off, and dredge in the flour until fully coated. Shake off excess flour.

Fry the Chicken
In a large skillet or deep fryer, heat the cooking oil over medium-high heat. Once hot, carefully add the coated chicken thighs. Fry for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt.

Make the Batter
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.

Cook the Waffles
Preheat your waffle iron according to the manufacturer's instructions. Pour the appropriate amount of batter into the preheated waffle iron and cook until golden brown and crispy. Repeat until all batter is used.

Assemble the Dish
Place one waffle on a plate and top with a piece of fried chicken. Add a pat of butter on top.

Drizzle warm maple syrup over the chicken and waffle stack. Serve immediately and enjoy!
