Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C).
Prepare the Okra
Rinse the fresh okra under cold water and pat dry with paper towels. Trim the stem ends off each okra pod.
Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove bacon from the skillet and place on paper towels to drain. Reserve 1 tablespoon of bacon grease in the skillet.
Cooking
Sauté the Okra
In the same skillet with the reserved bacon grease, add 1 tablespoon of olive oil. Add the okra to the skillet and sauté for about 3-4 minutes until the okra starts to soften.
Season the Okra
Sprinkle salt and black pepper over the okra, and stir well to combine. Continue cooking for another 2-3 minutes until the okra is tender but still has a slight crunch.
Char the Okra
Transfer the sautéed okra to a baking sheet and spread it out in a single layer. Bake in the oven for about 10-12 minutes until the okra is charred and crispy on the edges.
Combine with Bacon
Remove the okra from the oven, and crumble the cooked bacon over the top. Toss gently to combine.
Serving
Plate and Garnish
Transfer the charred okra and bacon mixture to a serving platter. Optionally, garnish with chopped fresh parsley and serve with lemon wedges on the side.
