Preheat the Oven
Preheat your oven to 450°F (230°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.

Cut in Butter
Cut 1 stick of unsalted butter into small pieces and add to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk
Pour in 3 tablespoons of milk, stirring until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a floured surface, and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a biscuit cutter or a glass.

Bake
Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.

Cook Sausage
In a large skillet over medium heat, cook 1 pound of pork sausage, breaking it apart with a spatula as it browns until fully cooked.

Make Roux
Once the sausage is browned, sprinkle 1/4 cup of all-purpose flour over the sausage. Stir well to coat the sausage and cook for 2-3 minutes.

Add Milk
Gradually pour in 2 cups of milk, stirring continuously to prevent lumps from forming.

Season the Gravy
Add 1 teaspoon of salt, 1 teaspoon of black pepper, and red pepper flakes to taste. Stir until the gravy thickens, about 5-7 minutes.
