Preheat Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Using a pastry cutter or your fingers, cut the cold unsalted butter into the flour mixture until it resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the flour mixture and pour in the buttermilk. Stir gently until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round and cut out biscuits using a biscuit cutter.

Place the biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes or until golden brown.

In a large skillet over medium heat, add the sausage and cook until browned, breaking it up into small pieces as it cooks.

Sprinkle the all-purpose flour over the cooked sausage and stir to combine. Cook for about 1-2 minutes until the flour is lightly browned.

Season Gravy
Continue to cook the gravy, stirring frequently, until it thickens to your desired consistency. Season with black pepper and salt to taste.
