Omelet Preparation

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the diced onions and sauté for 2-3 minutes until they become translucent. Add the sliced mushrooms and chopped collard greens, and cook for another 3-4 minutes until the greens are wilted and the mushrooms are tender. Stir in the diced tomatoes and cook for an additional 1-2 minutes. Season with salt and black pepper. Remove from heat and set aside.

    Prepare the Eggs

    In a medium bowl, crack the eggs and beat them well until the yolks and whites are fully combined. Season with salt and black pepper.

    Cook the Omelet

    In the same skillet, add the remaining tablespoon of olive oil or butter and heat over medium-low heat. Pour the beaten eggs into the skillet, tilting the pan to spread them evenly. Cook for about 2-3 minutes, or until the eggs begin to set but are still slightly runny on top.

    Add Filling and Fold

    Evenly distribute the sautéed vegetable mixture and shredded cheddar cheese over one half of the omelet. Carefully fold the other half over the filling and let it cook for another minute until the cheese melts.

    Serve

    Gently slide the omelet onto a plate and cut it in half if desired. Serve hot alongside house potatoes or grits.

    Prepare the Potatoes

    In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with garlic powder, paprika, salt, and black pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    Prepare the Grits (if using)

    In a pot, bring 4 cups of water to a boil. Slowly whisk in 1 cup of grits. Reduce heat to low and simmer, stirring frequently for about 5-7 minutes until thickened. Stir in 2 tablespoons of butter until melted and combined. Season with salt and pepper to taste.
