Method
Pork Chops Preparation
- 1
Season and Dredge
Season the pork chops with salt and black pepper on both sides. Dredge them in flour, shaking off the excess.
- 2
Fry the Chops
In a large skillet, heat the vegetable oil over medium-high heat. Add the pork chops and fry for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and set aside.
Roux Brown Gravy Preparation
- 3
- 4
Add Broth and Seasonings
Gradually whisk in the chicken broth, garlic powder, onion powder, Worcestershire sauce, salt, and black pepper. Bring to a simmer and cook until the gravy thickens, about 5-10 minutes.
Pickled Onions Preparation
- 5
- 6
Pickling Solution
In a small saucepan, combine apple cider vinegar, sugar, salt, and water. Bring to a boil, stirring until sugar and salt dissolve.
- 7
Pickle the Onions
Pour the hot pickling solution over the sliced onions. Let them sit for at least 30 minutes before serving.
Combine and Serve
- 8
Smother the Chops
Place the fried pork chops back into the skillet with the gravy, spooning the gravy over the chops. Allow them to simmer for an additional 5 minutes.
- 9
Plate and Serve
Serve the smothered pork chops with pickled onions on top and your choice of two Fixins: mashed potatoes and steamed green beans.
