    Season the Oxtails

    In a large bowl, season the oxtails with salt and black pepper. Toss to coat evenly.

    Brown the Oxtails

    In a large pot, heat the olive oil over medium-high heat. Add the seasoned oxtails and brown on all sides. This should take about 10-15 minutes. Remove the oxtails and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onions, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Liquid Ingredients

    Pour in the beef broth, soy sauce, and stir in the brown sugar, bay leaves, and thyme. Bring to a boil.

    Simmer the Oxtails

    Return the browned oxtails to the pot. Reduce heat to low, cover, and let simmer for 2-3 hours, until the meat is tender and falls off the bone.

    Thicken the Gravy

    In a small bowl, mix cornstarch with water to create a slurry. Stir this into the pot and cook for an additional 10 minutes until the sauce thickens.

Rice

    Prepare the Rice

    In a medium saucepan, combine the white rice, water, and salt. Bring to a boil over high heat.

    Cook the Rice

    Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Sauté the Green Beans

    In a skillet, melt the butter over medium heat. Add the trimmed green beans and minced garlic.

    Cook the Green Beans

    Sauté for about 5-7 minutes until the green beans are tender but still crisp. Season with salt to taste.
