Method

Omelet Preparation

  1. 1

    Prepare the Egg Mixture

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  2. 2

    Cook the Vegetables

In a non-stick skillet over medium heat, add a little oil or butter. Sauté the diced onion until translucent, about 3-4 minutes. Add the diced tomato and cook for an additional 2 minutes.

  3. 3

    Combine Ingredients

Add the shredded fried chicken to the skillet and stir until heated through. Pour the egg mixture over the chicken and vegetables, allowing it to settle. Cook until the edges begin to set, about 4-5 minutes.

  4. 4

    Add Cheese and Hot Sauce

Sprinkle the shredded cheddar cheese and drizzle the hot sauce over the top. Once the cheese starts to melt, carefully fold the omelet in half and let it cook for another 2 minutes.

  5. 5

    Serve the Omelet

Slide the omelet onto a plate and cut it in half if desired. Serve hot.

Side Preparation

  1. 6

    Prepare the Potatoes

In a pot, bring salted water to a boil. Add diced potatoes and cook until fork-tender, about 10 minutes. Drain and set aside.

  2. 7

    Sauté the Potatoes

In a skillet, heat olive oil over medium-high heat. Add the cooked potatoes, salt, black pepper, and paprika. Sauté until golden brown and crispy, about 5-7 minutes.

  3. 8

    Serve the Side

Transfer the sautéed potatoes to a serving dish and serve alongside the omelet.
