Method
Brining the Chicken

Prepare the Brine
In a large pot, combine water, kosher salt, brown sugar, crushed garlic, black peppercorns, thyme leaves, and bay leaves. Heat over medium heat, stirring until salt and sugar are dissolved. Remove from heat and let cool to room temperature.

Brine the Chicken
Once the brine has cooled, submerge the chicken pieces in the brine, cover, and refrigerate for 24 hours.
Preparing for Frying

Prepare the Buttermilk Mixture
In a large bowl, pour the buttermilk. Remove the chicken from the brine, rinse under cold water, and pat dry. Dip each piece in the buttermilk, ensuring it's well coated.

Prepare the Flour Mixture
In another bowl, mix together flour, paprika, garlic powder, onion powder, salt, and black pepper.

Coat the Chicken
Dredge each buttermilk-coated chicken piece in the flour mixture, pressing the flour onto the chicken to create a thick coating.
Frying the Chicken

Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully place the chicken pieces in the hot oil, making sure not to overcrowd the pan. Fry in batches for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Drain the Chicken
Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil.
Making the Biscuit

Prepare the Biscuit Dough
In a mixing bowl, combine all-purpose flour, baking powder, and salt. Cut in the cold cubed butter until the mixture resembles coarse crumbs.

Add Milk
Stir in the milk until just combined, being careful not to overmix.

Bake the Biscuit
Preheat your oven to 425°F (220°C). Drop spoonfuls of the dough onto a baking sheet and bake for 12-15 minutes, or until golden brown.
Serving

Serve the Chicken
Serve the fried chicken hot with your choice of two fixins (mashed potatoes and coleslaw) and a warm biscuit on the side.
