    Boil the Eggs

    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 12 minutes, then transfer them to an ice bath for 5 minutes to cool.

    Prepare the Filling

    Once the eggs are cooled, peel them and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Add the mayonnaise, Dijon mustard, salt, black pepper, and hot sauce to the yolks. Mash together until smooth and creamy.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg white halves. Set aside.

    Prepare for Frying

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with bread crumbs. Dredge each filled egg half first in flour, then dip it in the beaten eggs, and finally coat it in bread crumbs.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Eggs

    Carefully add the breaded deviled eggs to the hot oil in batches, frying for about 2-3 minutes until golden brown. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Serving

    Garnish and Serve

    Top the fried deviled eggs with crumbled bacon and chopped chives. Serve immediately with additional hot sauce on the side, if desired.
