Marinate the Chicken
In a large bowl, combine the chicken thighs with buttermilk. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Coating
In another bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Heat the Oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere.

Fry the Chicken
Carefully place the coated chicken in the hot oil. Fry for about 10-12 minutes on each side, or until golden brown and the internal temperature reaches 165°F (75°C).

Remove the chicken from the oil and place it on a wire rack to drain excess oil.
