Method

Chicken Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Add the chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare for Frying

In another bowl, mix the all-purpose flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Remove the chicken from the marinade, letting excess buttermilk drip off. Dredge each piece in the flour mixture until well coated. Set aside on a wire rack.

  3. 3

    Fry the Chicken

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the chicken pieces, a few at a time, and fry for about 10-12 minutes on each side or until the chicken is golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Remove the fried chicken and place it on a paper towel-lined plate to drain excess oil.

Biscuit Preparation

  1. 4

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 5

    Make the Biscuit Dough

In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually stir in the milk until a soft dough forms.

  3. 6

    Shape and Bake the Biscuits

Turn the dough out onto a floured surface and gently knead it 2-3 times. Pat the dough into a 1-inch thick rectangle and cut out biscuits using a round cutter. Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown.
