Prepare the Ribs
Preheat your oven to 150°C (300°F). Rinse the St. Louis ribs under cold water and pat them dry with paper towels. Remove the silver skin from the back of the ribs for better flavor absorption.

Season the Ribs
In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Rub this seasoning mixture all over the ribs, ensuring an even coating.

Slow Roast
Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover the ribs tightly with another piece of aluminum foil. Slow roast the ribs in the preheated oven for 2.5 to 3 hours, or until the meat is tender and pulls away from the bone.

Prepare the Barbecue Sauce
While the ribs are roasting, combine the smoky barbecue sauce, apple cider vinegar, and honey in a small saucepan. Heat over low-medium heat, stirring occasionally, until warmed through.

Glaze and Finish
Once the ribs are done, remove them from the oven and increase the temperature to 200°C (400°F). Brush a generous amount of the barbecue sauce mixture over the ribs. Return to the oven, uncovered, and bake for an additional 15-20 minutes to caramelize the sauce.

Serve
Remove from the oven and let the ribs rest for a few minutes before slicing. Serve with additional barbecue sauce on the side.
