Prepare the Steak
Season the N.Y. strip steak with seasoning salt and black pepper on both sides. Allow it to sit at room temperature for about 30 minutes before cooking.

Cook the Steak
Heat a skillet over high heat and add 1 tablespoon of butter. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare doneness. Adjust time based on your preferred doneness.

Prepare the Blue Cheese Butter
In a small bowl, mix together the blue cheese and remaining tablespoon of butter until well combined. Set aside.

Cook Day Vegetables
Sauté the assorted day vegetables in a tablespoon of butter or olive oil until tender, about 5-7 minutes. Season with salt and pepper to taste.
