Prepare the mussels
Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove any beards and discard any mussels that are open or damaged.

Cook the chorizo
In a large pot, heat olive oil over medium heat. Add the chopped chorizo sausage and cook until browned and crispy, about 5-7 minutes.

Add shallots and thyme
Add the diced shallots and fresh thyme to the pot with the chorizo. Sauté until the shallots are translucent, about 3-4 minutes.

Add wine and mussels
Pour in the white wine and bring to a simmer. Add the cleaned mussels and cover the pot. Steam for about 5-7 minutes or until the mussels open.

Make the smoked tomato cream
In a separate bowl, mix the heavy cream with smoked paprika. Once the mussels are cooked, stir in the smoked tomato cream mixture and season with salt and black pepper to taste.

Serve
Serve the mussels and chorizo hot in bowls, garnished with additional thyme if desired. Enjoy with crusty bread!
