Prepare the Sirloin
Season the pub sirloin with salt and black pepper. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the sirloin for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let it rest.

Make the Rosemary Demi-Glace
In the same skillet, add the rosemary demi-glace and bring to a simmer. Cook for about 3-4 minutes until slightly thickened. Set aside.

Sauté the Vegetables
In a separate pan, heat a tablespoon of olive oil and sauté mixed vegetables for about 5-7 minutes until tender-crisp.

Plate the Dish
On a plate, place the sliced sirloin, drizzle with rosemary demi-glace, add the shrimp and scallop skewers on the side along with the mashed or baked potatoes and sautéed vegetables. Garnish with a sprig of fresh rosemary.
