Prepare the Beer Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, salt, and black pepper. Gradually add the beer, mixing until smooth.

Batter the Haddock
Dip each haddock fillet into the beer batter, ensuring they are fully coated.

Fry the Haddock
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the battered haddock fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
To assemble, cut the brioche rolls in half. Place a lettuce leaf on the bottom half, followed by a piece of fried haddock, a slice of Cooper cheese, tomato slices, and red onion. Top with the other half of the roll.

Serve the haddock sandwiches immediately with fries on the side.
