Add Flavor
Stir in the minced garlic and cook for another minute until fragrant. Add the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.

Simmer the Broth
Pour in the beef broth, then add thyme, bay leaves, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

Toast the Bread
While the soup simmers, preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet and toast it in the oven until golden and crispy, about 10 minutes.

Assemble the Soup
Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls. Place a toasted slice of bread on top of each bowl and sprinkle generously with Swiss and Gruyère cheese.

Place the bowls under the broiler for 2-5 minutes, until the cheese is melted and bubbly. Keep a close eye to avoid burning.
