Deglaze and Simmer
Add the dry white wine to the pot to deglaze it, scraping up any browned bits. Let the wine reduce for about 5 minutes. Then add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes.

Prepare the Croutons
While the soup is simmering, preheat your oven to 375°F (190°C). Cut the focaccia bread into cubes and place them on a baking sheet. Bake for about 10-15 minutes until they are golden and crispy.

Assemble the Soup
Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a generous amount of Gruyere cheese and a few focaccia croutons.

Broil and Serve
Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden. Garnish with fresh parsley before serving.
