Prepare the Chicken
In a bowl, marinate the chicken breasts in buttermilk for at least 1 hour or overnight in the refrigerator.

Prepare the Coating
In a separate bowl, combine flour, Cajun seasoning, salt, and black pepper.

Fry the Chicken
Heat oil in a large skillet over medium-high heat. Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture. Fry chicken for about 5-7 minutes on each side until golden brown and cooked through. Drain on paper towels.

Make the Coleslaw
In a large bowl, mix shredded cabbage, carrots, mayonnaise, apple cider vinegar, and a pinch of salt. Combine well and set aside.

Make the Honey Sriracha Sauce
In a small bowl, mix honey and sriracha sauce to create the honey sriracha sauce.

Assemble the Sandwich
On the bottom half of each brioche roll, place a piece of fried chicken, followed by a scoop of coleslaw, a couple of leaves of Bibb lettuce, and a drizzle of honey sriracha sauce. Top with the other half of the roll.

Serve the crispy chicken sandwich hot with a side of fries.
