Marinate the Tuna
In a bowl, combine the soy sauce, rice vinegar, honey, sesame oil, minced ginger, and wasabi paste. Whisk until well combined. Cut the ahi tuna into small cubes and add to the marinade. Cover and refrigerate for at least 30 minutes.

Prepare the Wontons
While the tuna is marinating, preheat the oven to 375°F (190°C). Place the wonton wrappers on a baking sheet and brush lightly with olive oil. Bake for 8-10 minutes or until crispy and golden brown.

Assemble the Dish
Once the tuna has marinated and the wontons are crispy, remove the tuna from the marinade. Place a spoonful of marinated tuna on each wonton. Drizzle with additional honey and sprinkle with sesame seeds and chopped green onions.
