Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into shoestring fries, about 1/4 inch thick.

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches, frying for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, drizzle with truffle oil and toss with fresh rosemary and grated Parmesan cheese. Season with salt to taste.

Serve
Serve the truffle fries immediately with frites sauce on the side.
