    Prepare the Chicken

    Marinate the chicken breasts in buttermilk, salt, and pepper for at least 1 hour or overnight in the refrigerator.

    Prepare the Coating

    In a bowl, mix the all-purpose flour and cornstarch. Remove the chicken from the buttermilk, allowing excess to drip off, then dredge in the flour mixture, coating well.

    Fry the Chicken

    Heat oil in a deep skillet over medium-high heat. Fry the coated chicken breasts for about 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Fry the Eggs

    In a separate pan, fry the eggs sunny side up until the whites are set but the yolks remain runny.

    Assemble the Sandwich

    On the bottom half of the sesame seed bun, place the fried chicken, drizzle sweet chili sauce, add the sunny side up egg, pickled red onion, and shredded lettuce. Top with the other half of the bun.
