    Prepare the Ingredients

    Chop the cherry tomatoes in half, dice the chorizo, and chop the cilantro. Set aside the pickled onions.

    Cook the Chorizo

    In a large skillet, heat the olive oil over medium heat. Add the diced chorizo and cook until browned and cooked through, about 5-7 minutes.

    Add Corn and Tomatoes

    Add the corn and cherry tomatoes to the skillet with the chorizo. Stir and cook for an additional 3-4 minutes until the tomatoes start to soften.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet and gently stir with the chorizo and vegetables, cooking for about 3-5 minutes until the eggs are just set.

    Remove the skillet from heat. Stir in the pickled onions and cotija cheese. Garnish with fresh cilantro before serving.
