Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Season Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the edges, stirring halfway through.

Add Walnuts
In the last 5 minutes of roasting, add the walnuts to the baking sheet to toast them slightly.

Finish with Parmesan and Honey
Once the Brussels sprouts are done, remove them from the oven and sprinkle with grated Parmesan cheese. Drizzle with truffle honey before serving.
