    In a skillet over medium heat, cook the thick cut bacon until crispy, about 5-7 minutes. Remove and place on paper towels to drain excess grease.

    Prepare the Potatoes

    Dice the potatoes into small cubes. In the same skillet, add olive oil and heat over medium heat. Add the diced potatoes, salt, and pepper. Cook for 10-15 minutes until golden brown and crispy, stirring occasionally.

    Make the Pancake

    In a mixing bowl, combine the buttermilk pancake mix with the required amount of water or milk according to package instructions. Pour the batter onto a hot, greased skillet and cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

    In another small pan, melt butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (scrambled, sunny side up, etc.).
