Directions for Preparing Pan Seared Strip Loin

    Prepare the Potatoes

    Boil the Yukon Gold potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly. Once cool, cut into quarters.

    Make the Parsley Persillade

    Finely chop the parsley and garlic. Mix together in a bowl with a pinch of salt and set aside.

    Prepare the Blackberry Romesco

    In a blender, combine blackberries, toasted almonds, olive oil, red wine vinegar, and salt. Blend until smooth and adjust seasoning as necessary.

    Prepare the Lime Crema

    In a small bowl, mix together lime juice, sour cream, and salt. Set aside.

    Cook the Strip Loin

    Season the strip loin steaks with salt and black pepper. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Sear the steaks for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Plate the seared strip loin along with the quartered Yukon Gold potatoes. Drizzle with blackberry romesco and top with parsley persillade. Serve lime crema on the side.
