    Prepare the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium heat, then cover the pot and remove it from heat. Let sit for 12 minutes, then transfer the eggs to an ice bath to cool.

    Make the Lobster Filling

    In a small saucepan, melt the butter over medium heat. Add the cooked lobster tail and a pinch of Old Bay seasoning. Cook for 2-3 minutes until warmed through, then remove from heat.

    Prepare the Egg Yolks

    Peel the cooled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.

    Mix the Filling

    To the egg yolks, add the mayonnaise, Dijon mustard, remaining Old Bay seasoning, salt, and pepper. Mash together until smooth and creamy.

    Combine with Lobster

    Fold in the butter poached lobster and half of the chopped chives into the egg yolk mixture.

    Fill the Eggs

    Using a piping bag or a spoon, fill the egg white halves with the lobster and yolk mixture.

    Garnish and Serve

    Sprinkle the remaining chives on top of the filled eggs as a garnish. Serve chilled.
