    Grill the Salmon

    Preheat the grill to medium-high heat. Season the salmon fillet with salt and pepper. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and has grill marks. Remove from grill and let it cool slightly.

    Prepare the Asparagus

    While the salmon is grilling, bring a small pot of water to a boil. Add the trimmed asparagus and blanch for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

    Assemble the Salad

    In a large bowl, combine the mixed greens, roasted beets, blanched asparagus, and crumbled goat cheese. Toss gently to combine.

    Make the Lemon Vinaigrette

    In a small bowl, mix apple butter with a squeeze of fresh lemon juice, salt, and pepper to taste. Adjust the flavors as desired.
