Preparation and Cooking

    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Rub the pork belly with salt, black pepper, and five spice powder. Place in a roasting pan skin side up.

    Roast the Pork Belly

    Roast the pork belly in the oven for about 2.5 to 3 hours, or until the skin is crispy and the meat is tender. Baste occasionally with its own juices.

    Make the Carrot Ginger Puree

    In a pot, boil the carrots in salted water until tender, about 15 minutes. Drain and blend with grated ginger and butter until smooth. Season with salt to taste.

    Prepare the Mulled Wine Reduction

    In a saucepan, bring the mulled wine to a simmer over medium heat. Reduce by half until it thickens slightly. Set aside.

    Fry the Crispy Leeks

    In a frying pan, heat oil over medium heat. Add the sliced leeks and fry until golden and crispy. Drain on paper towels and season lightly.

    Plate and Serve

    Slice the pork belly and serve it on a bed of carrot ginger puree. Drizzle with mulled wine reduction and top with crispy leeks.
