    Prepare the Arborio Rice

    In a large saucepan, heat 2 tablespoons of oil over medium heat. Add diced onion and minced garlic, sautéing until soft. Add Arborio rice, stirring for 2 minutes. Gradually add vegetable broth, one cup at a time, stirring frequently until rice is creamy and al dente. Stir in chopped cilantro stems, salt, and black pepper. Allow to cool.

    Form the Arancini

    Once the rice mixture is cool, mix in crumbled Cotija cheese and red pepper agro dolce. Form the mixture into balls, about 1.5 inches in diameter.

    Coat the Arancini

    Set up a breading station: Place flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Dredge each rice ball in flour, dip in eggs, and coat with breadcrumbs.

    Fry the Arancini

    In a deep pan, heat oil over medium-high heat. Fry the arancini in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve the Barbacoa Arancini warm, with extra red pepper agro dolce drizzled on top if desired.
