Method

Preparing the Salmon

  1. 1

    Marinating the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Mix well. Add the salmon fillets to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Grilling the Salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Grill for about 5-7 minutes on each side, or until the salmon flakes easily with a fork. Remove from the grill and let it rest.

Cooking the Seasonal Vegetables

  1. 3

    Preparing the Vegetables

Wash and trim the asparagus, slice the bell peppers into strips, and cut the zucchini into rounds.

  2. 4

    Grilling the Vegetables

In a bowl, toss the prepared vegetables with a drizzle of olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Cooking the Rice

  1. 5

    Rinsing the Rice

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

  2. 6

    Cooking the Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
