Method

Preparing the Dough

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center.

  3. 3

    Combine Ingredients

Once the yeast mixture is frothy, pour it into the well along with the olive oil. Mix until a shaggy dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

  5. 5

    First Rise

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Shaping and Topping

  1. 6

    Prepare the Baking Pan

Grease a baking sheet with olive oil.

  2. 7

    Shape the Dough

Once the dough has risen, punch it down and transfer it to the prepared baking sheet. Stretch and press the dough into an even layer, about 1-inch thick.

  3. 8

    Second Rise

Cover the dough with a damp cloth and let it rise for an additional 30 minutes.

  4. 9

    Add Toppings

Preheat your oven to 425°F (220°C). Drizzle the remaining olive oil over the top of the dough. Use your fingers to create dimples all over the surface. Sprinkle with fresh rosemary leaves and sea salt.

Baking

  1. 10

    Bake the Focaccia

Bake in the preheated oven for about 20-25 minutes, until golden brown.

  2. 11

    Cool and Serve

Remove from the oven and let it cool for a few minutes. Slice and serve warm or at room temperature.
