Preheat the Oven
Preheat your oven to 200°C (400°F) to ensure it's hot enough when the cakes are ready to bake.

Prepare the Ramekins
Grease four ramekins with 1 tablespoon of unsalted butter. Dust the insides with cocoa powder to prevent sticking. Set aside.
Making the Batter

Melt Chocolate and Butter
In a heatproof bowl, combine 200g of dark chocolate and 100g of unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

Mix Sugar and Eggs
In a separate bowl, whisk together 150g of granulated sugar and 3 large eggs until the mixture is light and fluffy, about 3-5 minutes.

Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously to combine. Add 1 teaspoon of vanilla extract and a pinch of salt, mixing well.

Sift in 50g of all-purpose flour and gently fold into the batter until just combined. Be careful not to overmix.
